Ingredients

Yield:2 to 3 servings
  • 1tablespoon peanut oil
  • Salt
  • 1egg, beaten lightly with 1 teaspoon water
  • 1teaspoon minced fresh ginger
  • ¼cup diced Chinese roast pork (see recipe)
  • ¼cup diced cooked shrimp
  • 2tablespoons diced ham (preferably Smithfield)
  • ¼cup snow peas, cut into squares, or ¼ cup frozen green peas
  • 2teaspoons dry sherry
  • ¼cup chicken stock or water
  • 1scallion, minced
  • Approximately a quarter of a small head of iceberg lettuce, cut to match the snow peas
  • 3cups cooked plain rice
  • White pepper as desired
  • ¼teaspoon sugar

Preparation

  1. Step 1

    Have all ingredients prepared and on hand at the stove.

  2. Step 2

    Place wok or large skillet over high heat. Add oil and ¼ teaspoon salt. Add egg, scramble it briefly and break it up a bit, adding the ginger as you do so. Add roast pork, shrimp, ham, snow peas, sherry and stock and bring to a boil. Add scallion and lettuce and mix briefly.

  3. Step 3

    Break up any clumps in the rice, place it on top of the mixture, cover and cook 45 seconds. Uncover, stir to mix everything together, season with pepper and sugar and add salt to taste.

Wet very good! Just used pork loin - added the greens at the very end. Left out the okra because I couldn’t find any at the grocery. Will be a (new) New Year’s Day tradition. Everyone said it was the best preparation of black eyed peas they ever had.

This is very easy, quick and versatile. I used leftover pork tenderloin, asparagus, red bell pepper, and frozen peas. Toss in whatever you have! I’ve made other egg fried rice recipes - this was the easiest but the blandest. Couldn’t taste the ginger or sherry. Added quite a bit of soy sauce, and a bit of toasted sesame oil. As long as you have the rice already cooked and chilled, it’s a quick healthy dinner.

This was delicious! I’m about to do the type of review that I hate where there are many substitutions but I tried to stay true to the method besides some subbed ingredients. I used a thick cut uncured bacon, rotisserie chicken, and shrimp for the meats (all worked great!), added a diced onion, used regular sherry (medium california one), and left out the sugar (I always skip added sugar when I cook—this is why I added the onion for a bit of sweetness). So yum can’t wait to make again.
