Ingredients
Yield:9 cups (enough for a 12- to 15-pound turkey)
- 1½cups chopped onion
- 1cup chopped celery
- ¾cup butter
- 3cups chopped, peeled tart apples
- 1cup chopped walnuts
- 1½cups raisins
- 6cups stale, cubed corn bread
- 2teaspoons salt
- 1teaspoon black pepper
- 1teaspoon ground sage
- ½teaspoon ground coriander
- ½teaspoon ground ginger
- ½cup stock, milk or water (approximately)
Preparation
- Step 1
Sautee onion and celery in butter until soft. Add apples and saute another two to three minutes. Add remaining ingredients except for liquid and cook for several minutes. Taste for seasoning.
- Step 2
Add just enough of the liquid to moisten the mixture. Dressing should be somewhat dry as the apples will moisten it further as it cooks.
