Yield:16 to 18 servings (2 pies)
  • 3large eggs
  • cups sugar
  • Dash of salt
  • 1teaspoon cinnamon
  • ½teaspoon allspice
  • ¼teaspoon nutmeg
  • Juice of 1 lemon (optional)
  • 1teaspoon vanilla (optional)
  • 1cup heavy cream
  • 3cups cooked, mashed sweet potatoes
  • 2unbaked 8- or 9-inch pie shells

Preparation

  1. Step 1

    Preheat oven to 350 degrees. Beat eggs well.

  2. Step 2

    Add sugar, salt, spices and, if desired, lemon juice and vanilla. Mix thoroughly.

  3. Step 3

    Add cream, and stir.

  4. Step 4

    Add mashed sweet potatoes, and mix thoroughly.

  5. Step 5

    Turn into pie shells, and bake for 1 hour or until firm.

Remember the joke about reading all the directions before starting the test. Same applies to recipes. I thought the pie shell was getting pretty full but okay. Put it into the oven. Then reread directions and see “2 pie shells.” Think I’ll put a sheet pan on the lower shelf just in case.
