Preparation

  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    Put apricots in shallow baking dish. Add remaining ingredients and bake about 30 minutes, turning apricots occasionally. Cool them and serve at room temperature.

Come on people! Where's the love? How can you ignore this pluperfect apricot recipe? Personally, I find fresh apricots in season far better when cooked than eaten raw, and this recipe is divine. I have made it twice in two weeks. Yes, Joyce, do split the apricots apart and discard pits before cooking. The one caution I have is to cook those babies for longer than the 30 minutes. The longer they cook the more scrumptious they are!

Easy and delicious. The family suggested it be served with whipped cream, vanilla ice cream, or a little almond cookie. Might also cut apricots into quarters or eighths next time. Definitley going in the rotation.

You can also use a dessert wine, a port, or madeira, but cut back on the sugar. With heavy cream or ice cream, this makes a different tasting but delicious dessert.

Used apricots and nectarines cut into wedges. Found the fruit oddly tart and soft, really mushy. The resulting syrup was terrific in seltzer water! If I try it again I will increase the sugar and bake for less time. I will also try making the syrup and putting it hot over the fruit before putting it in the oven to reduce the cooking time and perhaps retain some shape and texture to the fruit.
