  • ½cup sugar
  • ½cup lime juice
  • 1cup blackberries
  • 1cup raspberries
  • 1cup cherries
  • 1cup strawberries

Preparation

  1. Step 1

    Remove rind and seeds from watermelon. Cut flesh into chunks, and puree in blender. Strain into bowl (there should be about 4 cups).

  2. Step 2

    Mix puree with sugar and lime juice. Chill 2 hours.

  3. Step 3

    To serve, cut blackberries and raspberries in half. Pit cherries, and cut in half. Slice strawberries.

  4. Step 4

    Divide fruits into six chilled soup bowls. Pour watermelon mixture over them, and serve immediately.

Great, super easy and tasty summer fruit soup! My only change would be to not put in the sugar. The watermelon gives its own sweetness as it is + the tart/sweetness of the limes makes the sugar unnecessary. Adding it gives the soup too sugary of a taste.

Definitely skip the sugar. I added a bunch of Sorel, mint, and extra lime and served in the empty watermelon rind!! Would be a fun thing to also spike with some booze ;)
