Preparation

  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Spray an 8-by-8 or 9-by-9-inch square pan with nonstick cooking spray.

  3. Step 3

    Thoroughly mix flour, sugar, cocoa, cornstarch, baking powder, baking soda and salt.

  4. Step 4

    In another bowl, whisk the egg white and milk and then stir in applesauce, corn syrup and vanilla. Stir in dry mixture until blended.

  5. Step 5

    Pour batter into prepared pan and bake 35 to 40 minutes, or until knife inserted in center comes out clean. Cool in pan and cut into squares.

Trust in the recipe and process. I followed exact as I hand all ingredients on hand - runny batter, not thick like typical brownie batter. Batter puffed up like a cake but more moist. Deep chocolate flavor with low fat - not a holiday dessert but a daily treat that checks the healthy box. Thank you NYT!

So I substituted mashed banana for apple sauce and pure maple syrup for the corn syrup. Was awesome!

Surprisingly good. I happened to have all of the ingredients for this unusual recipe on hand and decided to give it a try. It is not as chewy or dense as most brownies but more chewy than most cakes. Very moist. Sprinkle some powdered sugar on top. My teenager loved it!
