Ingredients

  • Package of 8 manicotti shells
  • 3cups ricotta cheese stuffing (see recipe)
  • cups Bolognese sauce (see recipe)
  • ¼cup freshly grated Parmesan cheese

Preparation

  1. Step 1

    Preheat oven to 400 degrees.

  2. Step 2

    Drop manicotti into boiling water as indicated on package. Cook 10 minutes or until the desired degree of doneness. Do not overcook. Drain.

  3. Step 3

    Stuff each manicotti with an equal portion of cheese stuffing, most easily done by using pastry bag outfitted with large round tube (No. 8). Fill them neatly without overflowing.

  4. Step 4

    Select rectangular baking dish large enough to hold stuffed manicotti neatly and compactly in one layer. Add one cup of sauce and smooth over bottom. Arrange stuffed manicotti on top. Spoon remaining sauce evenly over manicotti. Sprinkle with Parmesan cheese and bake 15 to 20 minutes.

I made two types of manicotti, meat and veggie. The veggie filling was good, but a bit thick. I thinned it with white wine. I cut broccoli very fine and used that as filling, and covered the veggie manicotti with tomato sauce without meat. I used classic bolognese for the meat manicotti and used the white sauce to cover. Cooking the manicotti in advance is not necessary.

This is not a recipe ready for prime (or NYT) time. The recipe does not integrate the steps of the recipe together or put them in a logical order. It does not state up front how long it is going to take. That should be required information. The sauce alone takes 2 hours. There was no identification to make the sauce first.

The filling ended up really runny after baking. Still flavorful, but not a great texture.

So very enjoyable! But even if you have bolognese sauce already made (which is advisable), I still puzzle how this could be prepared in “15 to 20 minutes.”
