Ingredients

Yield:4 servings
  • 46-ounce baking potatoes
  • 1teaspoon olive oil
  • Salt and freshly ground pepper to taste
  • Scallion and Yogurt-Cheese Stuffing, optional (see recipe) OR
  • Smoked Salmon and Scallion Stuffing, optional (see recipe) OR
  • Hearty Portobello Stuffing, optional (see recipe) OR
  • Curried-Spinach Stuffing with Caramelized Onions, optional (see recipe)

Preparation

  1. Step 1

    Preheat the oven to 450 degrees. Prick the potatoes several times with a fork and coat lightly with olive oil. Place directly in the oven and bake until tender, about 1 hour. Split the potatoes lengthwise, fluff with a fork and season with salt and pepper.

  2. Step 2

    Spoon the stuffing into the potatoes and serve immediately.
