Ingredients

Yield:4 servings
  • ½pound beef, sliced paper-thin
  • 2long onions or 1 medium round onion
  • 3tablespoons salad oil
  • 2tablespoons fresh ginger juice (see Step 1 in Marinade recipe)
  • 6 to 8cups hot cooked rice
  • Sauce

    • 1cup water
    • â…“cup dark soy sauce
    • â…“cup mirin

Preparation

  1. Step 1

    Cut beef slices into 2-inch lengths.

  2. Step 2

    Cut long onions diagonally in 1-inch lengths or slice round onion.

  3. Step 3

    In a large frying pan or wok, heat the oil over high heat. Stirfry the onion for a few minutes until soft. Add beef slices and continue stir-frying for another minute or so until meat is no longer red. Add sauce and continue stir-frying for another minute. Remove from heat and stir in ginger juice.

  4. Step 4

    Put portions of hot rice, 1½ to 2 cups per serving, into individual soup bowls. Cover rice with stir-fried beef and onions. Moisten with a few tablespoons of sauce. Serve immediately.

This was one odd recipe ...the sauce with all that water was crazy ...taste was fine but it was thin even with rice. And squeezing the ginger in a towel?yes there was juice but the three towels I tried didn’t let any juice through! I added shiitakes to the meat and put bean sprouts onions top and did not serve all the thin sauce with the meat and my dinner partner thought it was yummy ..I liked the mixed greens I stir fried to have with it. This was a strange recipe I repeat

For Ginger juice, I've noticed if you grate ginger, you are going to get much more juice. Also, this is known as japanese gyudon, which literally translates to beef bowl. The sauce is generally quite thin, almost like a dashi-sweet-soy broth. It's very good! But if it's not your taste, reduce it further.
