  • ¾cup chopped onions
  • 1tablespoon peeled, crushed, and finely chopped garlic
  • 4plum tomatoes, cut into 1-inch cubes (1½ cups)
  • 4tablespoons virgin olive oil
  • 2tablespoons red wine vinegar
  • ¾teaspoon salt
  • ½teaspoon freshly ground pepper
  • 7cups salad greens (Boston lettuce, escarole and other varieties), trimmed, rinsed and thoroughly dried
