Grilled Shiitake (Oak Mushrooms)

Ingredients
Yield:4 servings
- 12large fresh shiitake mushrooms
- 3tablespoons light soy sauce
- 3tablespoons lemon juice
- 2teaspoons mirin (see note)
- 2teaspoons finely chopped scallions
- ¼teaspoon Japanese powdered chili mixture (hichimi togarashi) or more to taste
Preparation
- Step 1
Preheat charcoal or gas-fired grill.
- Step 2
Wipe mushrooms with damp cloth and place them, stem side down, on hot grill and cook 2 or 3 minutes. Turn and cook 2 or 3 minutes more.
- Step 3
Meanwhile, blend soy sauce, lemon juice, mirin, chopped scallions and chili mixture. Serve mushrooms immediately with sauce on side for dipping.
Tip
- Mirin is a sweet sake-type wine used in Japanese cooking.
