  • Coarse salt and freshly ground pepper to taste
  • 2tablespoons balsamic vinegar (or to taste)
  • 1tablespoon fresh thyme leaves

Preparation

  1. Step 1

    Preheat coals.

  2. Step 2

    Cut the radicchio heads in half. Brush all over with half the olive oil. Season to taste with salt and pepper.

  3. Step 3

    Place the radicchio on a rack and grill, turning once, until the leaves are lightly charred and wilted. Sprinkle with the remaining oil, vinegar and thyme leaves and serve.

Tip
  • This goes particularly well with chicken, lamb or tuna.

Tasty. I did not use thyme bcz I had no fresh and dried would have added a weird texture. Toward the end of grilling with cut side up I topped with crumbles of gorgonzola and when on the plate toasted pinenuts. Served with grilled sottofileto (sirloin) and costoluto tomato wedges.

Simple. Healthy. Delicious! Can do in a cast iron skillet too.

This was a quick and tasty side dish to gochujang bbq ribs. They grilled while the ribs rested.
