  • 1cup cold water
  • 2cups coarse-chopped parsley leaves (without stems)
  • 1cup chopped scallions
  • 3tablespoons chopped fresh mint
  • 4medium-size fresh tomatoes, chopped
  • ¾cup lemon juice
  • 1cup olive oil
  • 1teaspoon salt, or as desired
  • ½teaspoon black pepper
  • 1teaspoon paprika

Preparation

  1. Step 1

    Mix wheat and water in a bowl and refrigerate 1 hour.

  2. Step 2

    Add all remaining ingredients except ¼ cup of the olive oil. Mix well. Refrigerate at least 1 hour.

  3. Step 3

    Before serving, mix again, check seasonings and sprinkle with remaining olive oil.
