Broiled Fish Cakes With Ginger And Cilantro

Ingredients
- 1baking potato weighing about ½ pound
- Salt to taste
- 1½pounds fillet of cod or other mild, delicate white fish
- 1tablespoon peeled and minced ginger
- ½cup minced cilantro leaves, plus more for garnish
- 1fresh or dried hot red chile, minced, or ¼ teaspoon cayenne, or to taste
- Freshly ground black pepper to taste
- 2tablespoons peanut or other oil
- Lime wedges
Preparation
- Step 1
Boil potato in salted water to cover until it is tender but not mushy, 30 to 40 minutes.
- Step 2
Meanwhile, place fish in a skillet that can later be covered. Add water to cover, salt the water, and bring to a boil over high heat. Cover, turn off heat, and set a timer for 10 minutes. After that time, use a slotted spoon to remove fish to a bowl.
- Step 3
When potato is done, peel it and mash it with the fish. Add seasonings, along with some salt and pepper, and work the mixture with your hands until it is well blended. Shape into 8 equal burger-shaped patties.
- Step 4
Preheat broiler, and set rack about 4 inches from heat source. Brush patties on both sides with oil, then place on a non-stick baking sheet. Broil carefully, until nicely browned on top, then turn and brown on the other side. Sprinkle with more cilantro, and serve hot, with lime wedges.

Loved these! Fantastic flavor! I couldn’t keep them in formed patties though. Any tips out there?
I added 2 eggs amd they held together well. I also used sweet potato, which is a better binder and added great flavor.
With the modifications this is our new go too favorite. I wanted to use what I had so I used a diced sweet potato in the microwave steamer for 10 minutes. Used 1/4 cup fresh ginger and instead of the chili I used 2 tbsp red chili paste. I also added 2 eggs to make it hold together better. Made patties and cooked on high on my Ninja grill for 4 minutes then flipped for 4 more. Approx. 250 calories for 2 patties
Great recipe and even better with a little salt added to the mix. I also served with a Thai style sauce from Bittman’s Best Recipes in the World
Quite bland and dry.
