Salmon, Tomatoes, Corn and Orzo

Ingredients
- 8ounces whole onion or 7 ounces chopped, ready-cut onion (1⅔ cups)
- 1teaspoon olive oil
- 3ears corn or 2 cups frozen corn kernels
- Enough fresh or frozen ginger to yield 1 tablespoon, coarsely grated
- 1teaspoon cumin
- ½cup orzo
- Pan spray
- 10ounces salmon fillet
- 1½pounds ripe tomatoes
- 1large clove garlic
- A few sprigs of oregano to yield 1 tablespoon chopped
Preparation

Bring water to boil in large covered pot.
- Step 2
Chop whole onion.
- Step 3
Heat nonstick pan over high heat until it very hot. Reduce heat to medium-high and add oil and onion. Saute until onion begins to soften.
- Step 4
Shuck corn and scrape kernels from cobs; grate the ginger.
- Step 5
Add the corn kernels, cumin and ginger to the onion and continue to cook until the corn is done, two or three minutes.

Cook the orzo.

When onion-corn mixture is cooked, spoon into a serving bowl. Wipe out the pan and spray it lightly with pan spray. Saute the salmon in the pan, following the Canadian rule: measure fish at the thickest part and cook 8 to 10 minutes to the inch.

Wash, dry, trim and quarter the tomatoes and halve them. Squeeze out some of the seeds and juice, and cut the tomatoes into small dice.
- Step 9
Mince the garlic; wash, dry and chop the oregano and stir into the tomatoes. Add to corn mixture.
- Step 10
When orzo is cooked, drain and stir in. When salmon is cooked, cut into bite-size pieces and carefully stir in.

Cut the recipe in half (dinner for 2) but used the full TBS of ginger to give it a little pop. Also increased salt and pepper. Used grape tomatoes and served the salmon filets whole, rather than in pieces...served the filets on a bed of the orzo/veggy mix. Was very happy with the result, so was my wife.
Most definitely not 2 servings, at least 4 good size ones. Followed the recipe and it was delicious. In season vegetables are a must. I would only include seasoning the salmon with salt and pepper before sautéing. Add season to taste afterwards.
Delicious, but two servings? Noway: More like four Bununesque servings. I would advise halving all the iongredients.
