  • pounds fresh pasta (capellini or fettuccine)
  • ½cup unsalted butter
  • cups freshly grated Parmesan cheese
  • 1cup heavy cream
  • Coarse salt and freshly ground pepper to taste
  • About 1 ounce white truffle

Preparation

  1. Step 1

    Cook the pasta in plenty of boiling salted water. Drain.

  2. Step 2

    Meanwhile, in a large saucepan big enough to hold the cooked pasta easily, melt the butter.

  3. Step 3

    Stir in the cheese and cream. Add the cooked pasta, toss well and sprinkle with salt and pepper.

  4. Step 4

    Put into a serving dish and grate the truffle over the pasta or serve the truffle at the table allowing each guest to help himself. Serve additional cheese in a small bowl.

black truffle is a completely different experience. White truffle is incredibly powerful and heady.

I used half a can of the Urbani white truffle and mushrooms ($9.99 per 6 oz at local grocery store) in place of real truffles. It was great. Probably not as good as real truffle, but I was not spending $210 per oz for actual truffles this weekend.

Loads of salt needed

I prepared this recipe to the letter and it turned out perfectly. An outstanding blend of flavors. The sauce is so creamy and delicious. Love the addition of truffles. Another bonus is that this is so easy to make; dinner is on the table in minutes once the pasta has cooked to 'al dente'. I will prepare this pasta for a very long time!
