  • 1¼cups sugar
  • 1cup water
  • 3tablespoons fresh lemon juice
  • 3tablespoons light corn syrup
  • ½teaspoon salt

Preparation

  1. Step 1

    In a saucepan over medium heat, poach the peaches in 1 cup of the sugar and the water until they are just tender, about 10 minutes. Remove peaches from the liquid and allow to cool. Place them in a blender and add the lemon juice, corn syrup, salt and the remaining quarter cup of sugar. Blend until smooth. If necessary, pass the peach mixture through a fine sieve.

  2. Step 2

    Place the mixture in an ice cream machine and process according to manufacturer's directions.

This worked well. I left the skins on which added to color and perhaps flavor. 12 medium peaches fitted just about in my cuisinart ice cream maker. Did not add all the sugar as my peaches were very sweet to start with. Will make again.
