  1. Step 1

    Fill a shaker with ice and add rum, lime juice, simple syrup and bitters. Shake; strain over fresh ice into a highball glass. Top with soda water if you like and garnish with a pineapple slice.

Nice, but better when following the classic Bajan recipe:

1 of sour (lime juice), 2 of sweet (simple syrup), 3 of strong (dark rum), 4 of weak (water)

Serve over lots of cracked ice with a dash of Angostura and good scrape of fresh nutmeg. The nutmeg makes ALL the difference - utterly delicious.

I've looked at a number of recipes, and the one I settled on is one part dark rum, one part orange juice, one part pineapple juice, a dash of grenadine and a squeeze of lime juice. Using those proportions, you can make one drink or a pitcher.
I think Myers rum is traditional for this. If you like its flavor but find it too strong, use half Myers and half another rum.

If you happen to have the charcoal grill fired up, or you plan ahead, grilling the pineapple over hot coals long enough to caramelize adds a lot of depth to the drink.

I also like it better a little sweeter, but the key is not to add too much soda water and water it down. Also very good with just a splash of pineapple juice to sweeten it a bit and add another flavor.

My recipe is from Black Beard's Tavern in Nassau, Grand Bahamas: 1 part Rum 1 part Pineapple Juice 1 part Orange Juice 1/4 part Fresh Lime Juice 1/4 part Grenadine This is the best Ever!!!
