Ingredients
Yield:6 or more servings
- 2large, red ripe tomatoes, about 1 pound
- 1cup finely diced celery
- ½cup finely chopped parsley
- 3tablespoons finely chopped hot cherry peppers, bottled without salt
- 2tablespoons finely chopped jalapeno or serrano chilies
- 1tablespoon drained capers, optional (see note)
- ¼teaspoon cayenne pepper
- 1teaspoon paprika
- 2tablespoons lime juice
- ¼cup olive oil
Preparation
- Step 1
Cut away and discard tomato cores. Cut tomatoes into 1-inch cubes. There should be about 2½ cups.
- Step 2
Put tomatoes in bowl and add remaining ingredients. Stir to blend and serve.
Tip
- I have been unable to locate unsalted capers. One tablespoon is a relatively modest amount in a dish that has six or more servings, but those on a strictly salt-free diet may wish to omit this ingredient.
