Squid Fritters

Ingredients
- ½cup finely chopped red bell pepper
- ½cup finely chopped green bell pepper
- 4scallions, trimmed, finely chopped
- 2tablespoons minced cilantro
- 1pound cleaned squid, finely chopped
- 1large egg, beaten
- 1cup beer
- 1½cups flour
- â…›teaspoon ground cayenne
- ½teaspoon baking powder
- Salt and ground black pepper
- â…”cup vegetable oil for frying, approximately
- Tartar sauce or hot sauce (or both) for serving
Preparation
- Step 1
Combine red and green peppers, scallions, cilantro and squid in a large bowl. Mix in egg. Stir in half the beer. In a separate bowl, whisk flour with cayenne and baking powder. Add to squid mixture. Add remaining beer and mix well. Season with salt and black pepper.
- Step 2
Heat oven to 200 degrees. Line a baking sheet with foil and spread several layers of paper towel on a work surface.
- Step 3
Heat a large cast-iron skillet on medium high. Add about ¼-inch of oil. When oil is hot, drop heaping tablespoons of fritter batter in pan, lightly flattening the mixture to make oval pancakes about 3 inches long. Turn when deep golden brown on one side, fry second side, then place on paper towel to drain. Repeat with remaining batter. Transfer cooked, drained pancakes to baking sheet and place in the oven to keep warm. Serve with tartar sauce or hot sauce or both.

I love this recipe!!! I've made it several times, and I, personally, find it delicious and quite easy to make!!!
Just finished making a batch! They are DELICIOUS! Prep work was quick and easy... had all of the ingredients on hand. Made one slight change tho. Rather than the cayenne pepper i added about 2 tsp Cajun seasoning and some of my favorite no salt seasoning. This recipe is a keeper for me and next time may try using raw shrimp.
A looooot of work. The end result was OK, but totally not worth the effort put in. We don't fry things often, so this was a bit outside of the box for us to begin with, which may be why we found it so frustrating, but the ingredient prep alone was pretty onerous as well.
