Preparation

  1. Step 1

    In a saucepan, combine the sugar and ⅔ cup water over medium-low heat. Stir occasionally, until the sugar dissolves. Pour into a bowl and cool.

  2. Step 2

    Finely grate the zest of the limes into the syrup. Squeeze in their juice and stir.

  3. Step 3

    Peel the bananas, thinly slice them and submerge in the syrup. Cover, and refrigerate for 1 to 6 hours.

  4. Step 4

    Serve with a few spoons of syrup or as a topping for ice cream.

This is delicious. It seems so simple, but it really, really works.

Excellent vegan dessert, received very positive feedback. I served this with whipped coconut cream which had been slightly sweetened with a dash of vanilla. I doubled the recipe and it served approximately ten generous servings. Very tangy.

Love this, so easy to do and delicious. The recipe in Adria's book suggests that this also works with apples, pears and kiwi fruit. I've tried the apples and pears and recommend that you use firm rather than ripe "soft" fruit for the salad. BTW, make at least twice what you think you're going to need.
