  • teaspoons olive oil
  • 2large cloves garlic, peeled and minced
  • ½cup bread crumbs
  • 2tablespoons chopped Italian parsley
  • 2teaspoons chopped fresh thyme
  • ½teaspoon kosher salt
  • Freshly ground pepper to taste
  • 4medium tomatoes, ripe but firm, cut in half crosswise, seeds scooped out

Preparation

  1. Step 1

    Preheat the broiler. Heat the olive oil in a medium-size nonstick skillet. Add the garlic and cook, stirring constantly, for 30 seconds. Stir in the bread crumbs and remove from heat. Stir in the parsley, thyme, salt and pepper. Place the tomatoes on a baking sheet and sprinkle heavily with the crumbs. Broil just until the crumbs are lightly browned. Serve immediately.
