Cherry Spumoni

Ingredients
- ¾cup milk
- ¾cup sugar
- ⅛teaspoon salt
- ¾cup half and half
- 1½cups heavy cream
- 1teaspoon vanilla extract
- 1teaspoon almond extract
- 3tablespoons tart cherry concentrate (see note)
- ½cup (packed) frozen, pitted tart (sour) or sweet cherries, defrosted, or pitted tart or sweet canned cherries (do not use fresh fruit)
- ¼cup plus 2 tablespoons slivered or sliced blanched almonds
- ¼cup plus 2 tablespoons chopped semisweet chocolate or chocolate chips
Preparation
- Step 1
Place milk in a small heavy-bottom saucepan over medium heat until bubbles just begin to form around edge of pan. Remove from heat, and add sugar and salt. Stir until dissolved.
- Step 2
Add half and half, heavy cream, vanilla extract, almond extract and cherry concentrate. Mix well. Transfer to a bowl, and set in an ice water bath until cool, about 10 minutes.
- Step 3
Coarsely chop cherries, and press between paper towels to remove excess liquid. Add to chilled milk mixture. Begin freezing in an ice cream maker according to manufacturer's instructions. When ice cream has begun to thicken, after about 10 minutes, add almonds and chopped chocolate. Continue freezing until ice cream is very thick.

Wow it was a hit! I made a few changes: 2 cups heavy Cream (whole container) 1 cup 2% milk (what I have on hand) No Half and Half 3 tablespoons of Cherry Liqueur (Herring) - I call this the secret ingredient Used Trader Joe’s Dark Chocolate Pound Plus for the chocolate Used Trader Joe’s frozen cherries I made the concentrate per the instructions of another reader I was asked to make a repeat. I have a tabletop ice cream freezer that requires no freezing bowl it took almost the full hour.
Really good! I made my own cherry "concentrate" by taking the frozen, pitted cherries I was going to use in the ice cream, adding a couple tablespoons of sugar, and boiling it down for a while until I had a nice cherry syrup. Worked great. Next time I'll add the chopped cherries later in the freezing process, because they all clumped up on the stir bar in the ice cream maker when I added them at the beginning.
