Ingredients

Yield:1 large, 2 medium, or more smaller pizzas
  • 2large or 4 small green tomatoes
  • Coarse salt
  • Pizza dough (see recipe)
  • 1cup freshly grated Parmesan
  • ½cup coarsely chopped or torn basil

Preparation

  1. Step 1

    Preheat oven to 500 degrees.

  2. Step 2

    Thinly slice tomatoes, salt lightly and let sit at least 20 minutes, then drain off any accumulated liquid.

  3. Step 3

    Top pizza rounds with tomato slices and Parmesan. Bake about 10 minutes, or until nearly done. Sprinkle with basil and cook until done.

This has been a staple at our parties ever since the recipe appeared 20 years ago.

I have to say I was doubtful, but this blew me away. For a quick and delicious meal, grab your favorite refrigerated dough, your green tomatoes, and trust this recipe. I did soread olive oil on the crust before adding the toppings. Simple and delish!
