Yield:About 36 kreplach
  • Noodle dough made with 2 cups of flour (see recipe)
  • 1pound boiled beef (see recipe)
  • 2tablespoons onion juice
  • 1egg, lightly beaten
  • Salt to taste, if desired
  • Freshly ground pepper to taste

Preparation

  1. Step 1

    Prepare the dough as directed.

  2. Step 2

    Shred or chop the meat fine (may be done in food processor). There should be about two cups.

  3. Step 3

    Put meat into mixing bowl. Add onion juice, egg, salt and pepper. Blend by hand.

  4. Step 4

    Divide dough into quarters. Roll as thin as possible by hand or in pasta machine. A preferred method for filling kreplach is to cut the sheet of dough into 2½- or 3-inch squares. Fold over and seal.

  5. Step 5

    Drop kreplach into boiling water and cover. Cook 15 to 20 minutes.

  6. Step 6

    Serve kreplach in well-seasoned hot chicken broth 4 to 8 kreplach apiece.
