Ingredients

Yield:4 servings
  • 2pints gooseberries
  • ¾cup sugar
  • 2tablespoons elder flower concentrate
  • 1cup whipped cream

Preparation

  1. Step 1

    Top and tail the gooseberries. Cook them with the sugar in a saucepan for about 15 minutes. Add the elder flower concentrate and mix in thoroughly. Chill.

  2. Step 2

    Fold the gooseberries into the whipped cream. Add extra sugar or elder flower concentrate if necessary.

Tip
  • This is good served with plain sugar cookies.

Elder flower concentrate is found in Ikea stores. It is delicious watered down. They did make rhubarb syrup too which was divine. I grow my own gooseberries in PA, some states forbid them! I also have a blackcurrant bush . They both produce lots of fruit each summer.

I think this is expecting green sour gooseberries, not sweet dessert gooseberries (golden or red)

Where on earth does one find gooseberries ? I have never seen them in *any* grocery store here in the U.S. — ever !

I just found them at Whole Foods in Metairie, LA. But I've no idea where to find elder flower concentrate.

Farmers markets or in your backyard for the gooseberries

Elderflower syrup can be found in specialty grocery stores or online or, if you want to kick it up a notch, use St. Germain elderflower liqueur. It is also quite easy to make yourself - elder bushes grow abundantly just about everywhere (roadsides, backyards, parks). Plant some of your own and you can use the blossoms and the fruits for many wonderful things!

Gooseberries are not the only fruit that can make a terrific fool. Have fun! Experiment with different kinds of fruits! Use raspberries or blackberries or cranberries [cranberries need lots of extra sugar] or almost any kind of soft [i.e., not raw apples or pears or such] fruit that appeals to you.
