Canadian Bacon With Onion and Apple

Ingredients
- 2-3 tablespoons butter
- 1pound thick-cut Canadian bacon
- 1large white onion, cut in rings
- 2medium-sized apples, skins on
- Freshly ground black pepper
- 1tablespoon chopped parsley
Preparation
- Step 1
Melt the butter in a heavy frying pan and lightly fry the bacon until golden. Remove and drain on paper towels. Keep warm.
- Step 2
Fry the onion slices until soft in the remaining fat. Add the apples, cored and cut into rings ½-inch thick. Cover and simmer for 5 to 10 minutes, shaking the pan from time to time to prevent them from sticking.
- Step 3
Return the bacon to the pan and heat through. Season with pepper, sprinkle with parsley and serve.
- This dish is excellent with mashed potatoes or fried eggs.

Just came across this recipe when I bought some local Canadian bacon and wondered what to do with it, aside from eggs Benedict. This recipe turned out a delicious dinner, along with Mock Frites and white wine. Prep is quick and easy and the directions clear and accurate. It’s a great, tasty week night meal. I’ll definitely make this again.
This makes a great Sunday supper, even on its own with crusty bread and a white wine.
