Blueberries au Citron

Ingredients
- 3tablespoons lemon juice
- ⅓cup maple syrup
- 1½pints (20 ounces) blueberries, preferably small wild ones
Preparation
- Step 1
Mix the lemon juice and maple syrup in a bowl large enough to hold the blueberries.
- Step 2
Rinse the blueberries well in cool water, removing and discarding any damaged berries or foreign matter. Drain the berries well, and add them to the syrup mixture. Mix well, and refrigerate for at least 1 hour before serving.

These are heavenly! This is my favorite kind of non-recipe recipe. Simple & transformative. I used regular organic blueberries instead of wild ones and ate them after 25 (not 60 minutes as instructed) and they were simply fantastic.
It’s 95 degrees F outside (“feels like 100” per my weather app). I have beautiful farmers market blueberries that I really must do something with, but I can’t bring myself to turn the oven on to make a pie. I probably wouldn’t have even looked at this if it were from anyone other than Jacques Pepin, but I decided to try it. The flavor is far more interesting than the sum of its parts! And I’m not even a big maple syrup fan.
