  • 8tablespoons (1 stick) butter, softened
  • 8ounces deep-yellow, extra-sharp cheddar cheese, grated or finely shredded
  • ½teaspoon salt
  • ½teaspoon cayenne pepper (add a pinch more if you like them a bit hotter)
  • cups plus 1 tablespoon sifted flour

Preparation

  1. Step 1

    Preheat the oven to 350 degrees. Mix the butter with the cheese and the seasonings in a large bowl. Add the flour and knead into a smooth dough.

  2. Step 2

    Pack the dough in batches into a cookie press and press through the flat, ridged-line opening onto an ungreased cookie sheet to form ''straws'' of about 2½ to 3 inches in length.

  3. Step 3

    Bake until golden (do not let them brown) and crisp, 15 to 20 minutes. Remove from the pan with a metal spatula and let cool. Serve or store in an airtight container. (The straws are very fragile.)

Going to make these this weekend and make martinis to toast the dear departed Julia Reed, may she rest In peace.

These are attractive and tasty but I struggled with the recipe. First, the dough would not come together. This may have been because I used a very dry cheddar, but the dough had the consistency of sand. After adding 2T of water I was able to knead into a smooth mass but it was so stiff that I almost broke my cookie press. Baking at the suggested time yielded cookies that were not crunchy. I added several minutes and they browned but never got crunchy.

I love cheese straws and this recipe turned out perfectly. I will make them again and again. My husband loved them too.

I don't have a cookie press, so I pushed the dough through a frosting tip (the widest, star-shaped one). It took a little while, but they came out perfect!
