  • Âľpound cooked lean ham, cut into ÂĽ-inch dice
  • 1pound sweet potatoes, cooked, peeled and cut into ½-inch dice
  • 1small onion, peeled and cut in small dice
  • ½medium green bell pepper, stemmed, seeded, deribbed and cut in small dice
  • ½cup heavy cream
  • 2large eggs
  • 1tablespoon chopped fresh sage or 1 teaspoon dried sage
  • Freshly ground black pepper to taste
  • 3tablespoons unsalted butter

Preparation

  1. Step 1

    In a large bowl combine ham, potatoes, onion and green pepper. In a small bowl, whisk together cream, eggs, sage and pepper and add to the ham mixture.

  2. Step 2

    Preheat broiler. In a medium-sized skillet, melt 1½ tablespoons of the butter over high heat. When almost brown, add the hash, reduce the heat to medium and cook for 4 minutes, gently shaking the pan occasionally to loosen the hash at the bottom.

  3. Step 3

    To brown the top, invert hash into an overproof dish and place under broiler for 3 to 5 minutes.

Some instructions have been omitted, such as when to add the ham/egg/cream/sage/pepper mixture to the mixture in the pan; and whether to keep stirring the mixture as it cooks. I shaved some butter onto the top of the mixture after the initial browning, and flipped it piecemeal over to brown on the other side in my nonstick pan (broiler was unavailable so I couldn't use my iron skillet). I agree that cooking onions thoroughly takes longer than 4 minutes; in my experience it takes 7 or 8 minutes.

Such a delicious change of pace breakfast! The combination of sweet potatoes and ham (I also added some Thanksgiving turkey) and sweet cream created a memorable post holiday breakfast. It already has me thinking about variations, such as cornbread stuffing, in place of the peppers 🌶.

Mysterious directions to “invert” contents of pan to brown the top. No. Just place directly under the broiler. If you invert it, you will be browning the bottom, which is already browned. Also, mysterious: the use of the last 1.5 T of butter!
