  1. Step 1

    Cook chopped slab bacon on medium-high until done; remove with slotted spoon. Saute chopped bok choy. Combine cooled bok choy and bacon with sesame oil and soy sauce; toss.

What an easy, delicious prep for bok choi! Since there are questions, here’s what worked. Cooked down 1 entire chopped head of bok choi in olive oil (no bacon), and finished by tossing with 10-12 shakes of toasted sesame oil, ~1 to 1.5 tblsp spy sauce and a pinch of kosher salt. We really enjoyed it served with Sam Sifton’s orange chicken.

Looks delicious. After a friend brought a book choy salad to our book club, I make one often. Chop up Shanghai book choy raw, mainly the whites and add just about any fixings you'd put in a slaw or a green salad. Asian flavours, western, whateversuits the moment. It’s like eating a delicate cabbage crossed with celery. And so easy.

I don't think I used enough sesame oil. Be sure to toss after removed from heat and water removed. Don't cook the bok choy too much.
