Braised Brussels Sprouts With Chestnuts

Ingredients
Yield:6 - 8 servings
- 2pounds brussels sprouts
- 1pound chestnuts, peeled
- 2tablespoons unsalted butter
- 1 to 2cups chicken stock, preferably homemade
- Coarse salt and freshly ground pepper to taste
Preparation
- Step 1
Prepare the sprouts by trimming the outer leaves and cutting a cross in the stem. Heat the butter in a heavy frying pan and add the chestnuts.
- Step 2
Pour in the stock, cover, and simmer slowly for 20 minutes or until tender. Add the sprouts and add more stock if necessary, barely to cover.
- Step 3
Replace the lid and cook for five to 10 minutes or until tender. Correct seasoning and serve.
Tip
- If using canned chestnuts, rinse and drain them and simmer them for 10 minutes in the stock before adding the sprouts.

Used 1.5 T olive oil, 1/2 lb of Brussels sprouts, 2 slices of thick bacon, 1/2 pack of 6 oz vacuum packed chestnuts, 1/2 medium onion/shallot - roasted at 375 for 30 minutes. Quite good. Will add breadcrumbs next time.
