Piña Colada

Ingredients
- 4ounces golden rum
- 4ounces pineapple juice
- 4ounces Coco Lopez cream of coconut
- 3cups ice
- Pineapple slices, for garnish
- Maraschino cherries, for garnish
Preparation
- Step 1
Add rum, pineapple juice, cream of coconut and ice to blender. Blend until smooth and frosty; add more ice as necessary. Pour into tall glasses and garnish with pineapple slices and maraschino cherries (and paper umbrellas, if you have them).

Skip the Coco Lopez and use a can of real coconut cream, like Thai Kitchen brand. It will throttle the sweetness way back and provides a beautiful consistency.

Add a squeeze of lime!
If you love coconut, use Malibu. Coco Lopez makes a Pina Colada, coconut milk is not the same.
I I make recipe exactly as written except freeze chunks fresh pineapple and replace part of ice with frozen pineapple. Its our favorite beach cocktail and always make sure our airbnb has a blender ;-)
