Rum With Iced Hibiscus Tea

Ingredients
- 2½ounces dark rum
- 4ounces chilled hibiscus tea (see note)
- Splash of soda water
- Nutmeg
- Pineapple chunk, for garnish
Preparation
- Step 1
To make the chilled hibiscus tea, put ½ cup dried hibiscus flowers in a large bowl. Add 1 quart cold filtered water. Refrigerate for 8 hours. Strain; discard solids. Keep cold.
- Step 2
Fill a highball glass with ice and add rum, tea and soda water. Grate a little nutmeg on top and garnish with a pineapple chunk.

This was an interesting combo. I used Red Zinger tea (made hot), and Myer's rum. Goes down easy and would be superb on a hot day.
Add a splash of ginger beer and a sprinkle of allspice to take it up a couple of notches. Cool, spicy and delicious!
Winco in the Portland, OR area has dried hibiscus in its bulk section at extremely reasonable price. If you don’t live near a Winco, grocery stores that cater to an Hispanic population would be good place to check for dried hibiscus leaves for much less than ordering it online.
To the editor: Is there a reason I can't just make regular hibiscus tea with hot water, and then chill it? Does it change the flavor?
Anyone know where to get dried hibiscus? Or should I just use a fruity tea like another cook did?
