This salad came to The Times from Kathryn Anible, a personal chef in New York, whose solution to adding color to your winter table lies in this fresh, crunchy salad. “I just like it because the endive is not frequently used in salads, and it tends to be a little bitter,” she said. “The apple sweetens it up a little bit and makes it more approachable.   • ¼cup olive oil
  • 2tablespoons apple cider vinegar
  • 1tablespoon orange juice
  • 1teaspoon honey
  • Dash of salt
  • ¼cup pecans
  • 2heads of endive, chopped
  • 1cup arugula
  • 1apple, sliced thin
  • ¼cup dried cherries or cranberries
  • ¼cup goat cheese, crumbled (optional)

Preparation

  1. Step 1

    To make dressing: In a small bowl, whisk together the oil, vinegar, juice and honey. Season with salt.

  2. Step 2

    In a small sauté pan, toast the pecans over medium heat. Allow to cool.

  3. Step 3

    Mix together the endive, arugula, apple and cherries (or cranberries) in a medium-size bowl. Toss with enough dressing to coat. Top with the pecans and goat cheese (optional).

This 5-star recipe meets with oohs and aahs every time I make it. Its dressing gives perfect counterpoint to the endive and serves as ideal companion to the apple, cranberries and goat cheese. (Serve it last in lieu of dessert.)

If doing this for a holiday dinner and want to do in advance, how to prevent apples and endive from going brown at the edges? I know to mix with dressing at last moment. thanks!

Delicious! The orange juice and honey help counter the bitterness of the endive. Included goat cheese and dried cherries. So so good!

Great salad! Prefer dried cranberries and substituted sliced kiwi for apple (for our group’s food of New Zealand dinner) and it worked well

Used tart cherries…excellent. Next time will use walnuts for a bit more contrast.
