  • 2bags of baby carrots, about 12 ounces each, scraped and washed
  • 3tablespoons margarine
  • 1tablespoon sugar
  • 1teaspoon lemon juice
  • Salt and pepper to taste
  • 2tablespoons chopped fresh mint

Preparation

  1. Step 1

    Steam the carrots for five minutes or until barely tender. Melt the margarine in a saucepan. Add the carrots, sprinkle with sugar, lemon juice, salt and pepper. Cook over high heat for five minutes, stirring all the time.

  2. Step 2

    Remove to a serving bowl.

  3. Step 3

    Sprinkle the mint over the carrots and serve.

I added grated ginger root and lemon zest, and used just 1 tablespoon of butter and 1 tbsp brown sugar for 1 pound baby carrots. While the carrots were draining I mixed the sauce up in the same pot, then added the carrots back in to finish. Lovely and quick!

The carrots were perfectly cooked and had a nice subtle flavor. The mint sprinkled over the top looked pretty but didn't give the dish much extra taste.
